The Plantain Cake is now one of favorite treats to make. We used very ripe plantains and followed the direction exactly - used 1/4 cup chopped walnuts and WOW!!! This is a wonderful exciting new way to cook with plantains. Being raised in Miami Beach - I knew of pan frying plantains topped with a dusting of sugar and now...this is an additional way to use these delicious fruits. Thank You Ched Lola

delicious! added 1 tsp of amaretto, brown suger instead of white, and used coconut greek yogurt.
