- 1 1/2 lb. mexican chorizo (removed from casings, if you can’t find that, you can use hot Italian sausage)
- 1 cup chopped onion
- 1/2 cup red bell peppers (chopped)
- 4 garlic cloves (finely minced or pressed)
- 4 tsp. chile powder
- 10 large eggs
- 3 cups half and half
- 1/2 tsp. Tabasco
- 1/2 tsp. black pepper
- 1 1/2 cups pepper jack cheese (grated)
- 1 1/2 cups grated cheddar cheese
- 1/2 cup onion tops (chopped green)
- 1/4 cup chopped cilantro
- 8 corn tortillas (cut into quarters)
