This 4-ingredient chia seed pudding is creamy, decadent, and can be paired with any fruit or nuts of your choice. Treat your breakfast routine to this coconut chia pudding! The chia seeds are soaked overnight in creamy coconut milk, allowing them to plump up and create a filling meal. McCormick® Cinnamon Sugar and Pure Vanilla Extract are then added to bring warmth and sweetness to the delightful dish.
Ingredients
- 13.66 oz. coconut milk
- 1/4 cup chia seeds
- 1 Tbsp. cinnamon sugar
- 1/2 tsp. pure vanilla extract
Directions
- Mix all ingredients in bowl until fully combined. Cover. Refrigerate overnight.
- Stir before serving. Top with toasted coconut, mixed berries and sprinkle with additional Cinnamon Sugar, if desired. Serving Suggestion: Try with your favorite toppings, such as toasted nuts, chopped fresh mango or pineapple, or dried fruits.
