I tried this dish tonight. It came out just delicious with a few alterations I made. I mixed up one pound of peeled, cubed beets with a half pound each of sliced carrots and rutabagas, peeled and cubed. Increased the olive oil to three tablespoons, salt and black pepper to taste. I'm sure this dish would be excellent with just the beets standing alone, but the sweetness of the rutabagas and carrots added an element of pizzazz! I added 10 minutes to the hour cooking time to accommodate my stove's peculiarity, and the veggies cooked thoroughly with a fantastic caramelized crisp about the edges. I would certainly offer this dish to visitors with pride. Thanks very much for the base recipe!

I love beets this way, tasty and a great source of potassium! Reminds me of my childhood. A simple recipe that needs nothing added... just be sure and start with good quality organic beets.

This was super-good!! I added cubed zucchini and crook-neck squash from my garden, a couple cloves of garlic and half a red onion. Jackpot dinner for the family... with a nice cut of steak on the side = )
