  • 2 tablespoons promise buttery spread
  • 1 orange bell pepper
  • 1 zucchini (small, or yellow squash, finely chopped (about 1 cup))
  • 4 cremini mushrooms
  • 1/2 cup sweet onion
  • 1/3 cup orzo pasta (cooked according to package directions)
  • 2 tablespoons parmigiano reggiano cheese
  • 1 tablespoon loosely packed fresh basil leaves
  • 1 clove garlic (finely chopped)

    Directions

    1. Melt Promise® Buttery Spread in 12-inch skillet and cook orange pepper, zucchini, mushrooms and onion, stirring occasionally, 5 minutes or until vegetables are tender. Stir in garlic and cook 30 seconds. Stir in orzo and cook, stirring frequently, 2 minutes or until starting to turn golden. Sprinkle with cheese and basil and season, if desired, with ground black pepper.
