- 1 bunch broccoli rabe
- 1/4 cup olive oil
- 4 anchovy fillets (flat)
- 1 tsp. crushed red pepper (or 1 red chile pepper)
- 6 cloves garlic (finely chopped or thinly sliced)
- 1/2 cup dry vermouth (or dry white wine)
- 1 lb. pasta (orecchielle)
- ricotta (grading of, solata)
- black pepper

Directions
- In a medium pot, bring a few inches of water to boil for the rabe.
- Bring a large pot of water to boil for the pasta. Salt the water in both pots once it comes to a boil
- In the medium pot, cook the rabe until wilted; about 1-3 minutes. Drain and transfer to a bowl of ice water to cool. Drain; chop into bite-sized pieces
