- 1 oz. strong white bread flour
- 4 floz water
- bun (Hot Cross, Loaf)
- 12 oz. strong white bread flour
- 4 floz whole milk
- 4 oz. tangzhong (all of the starter you made)
- 2 oz. dark brown sugar
- 2 oz. unsalted butter (very soft or melted)
- 2 Tbsp. skimmed milk powder (optional)
- 1 large egg
- 2 tsp. mixed spice
- 1 tsp. dried yeast (instant, suitable for bread makers)
- 1 tsp. salt
- 1 Orange
- 3.5 oz. mixed citrus peel
- 3.5 oz. dark chocolate (buttons, or replace with raisins)
- 1 egg (lightly beaten with 1tbsp water to glaze)
- 3 Tbsp. apricot jam (to glaze)
- 2 Tbsp. plain flour
- 2 Tbsp. milk (more if needed)
