Description
An original recipe created to serve with leftover fried rice or Chinese noodles. Can also be made with chicken. Pineapple chunks and juice can be substituted for the orange for Hawaiian style pork chops.
Ingredients

- 1 tsp. olive oil
- 8 boneless pork chops
- 8 oz. beef stock (or broth)
- 1 Tbsp. apple cider vinegar (or plain vinegar)
- 1 Tbsp. brown sugar (dark or light)
- 1 green bell pepper (chopped)
- 1/8 tsp. orange zest
- 1 orange segmented (large)
- 1/2 cup orange juice

Directions
- In a skillet, drizzle olive oil and brown pork chops. Remove pork chops.
- Stir together beef both or stock, apple cider vinegar or vinegar, brown sugar, and 1/4 cup orange juice. Pour a little in the bottom of the skillet. Put chops and any juice back into the skillet.
- Add green bell pepper. Pour remaining stock mixture over pork chops in skillet. Cover and simmer on medium low for 30 minutes.
- Turn to low heat. Add orange zest and orange segments. Cover and simmer 15 more minutes.
- Remove lid. Add 1/4 cup more orange juice. Simmer uncovered on low heat an additional 5-10 minutes until sauce is desired consistency.
