Orange Curd and Tonka Bean Sbrisolona Cake

The Sbrisolona Cake has a rich history. The Sbrisolona cake earned its name from its crumbly texture and traces its origins impoverished times when ingredients were limited for the poor. In places where Sbrisolona is traditionally eaten, the cake is not sliced, but rather hit in the center so that it crumbles part. This Orange Cake and Tonka Bean Sbrisolona Cake respects the traditional origins of the cake with a crumbly crumb flavored with tonka bean and a rich orange creamy orange curd running through the middle to add some moisture.
Ingredients
- 125 grams flour
- 100 grams almonds (with their skin)
- 100 grams sugar
- 75 grams cornmeal (coarse)
- 100 grams butter (softened)
- 1 egg yolk
- grated orange peel
- 1/2 bean (grated Tonka)
- 1 orange juice (and peel)
- 100 grams sugar
- 100 grams butter
- 3 egg yolks
Directions
- Chop the almonds coarsely and combine them with the flour, sugar, cornmeal, butter, egg yolk, grated orange peel, and the grated Tonka bean in a bowl.
- Mix the ingredients together with a wooden spoon at first, then use your fingers, the dough should resemble oatmeal and crumble easily.
- Refrigerate this mixture for at least 30 minutes.
