  • 2 tablespoons olive oil
  • 1 red onion (large, peeled and sliced into thin rings)
  • 1 tablespoon brown sugar
  • 6 ounces sirloin steak (or thin-cut rump)
  • 2 tablespoons mayonnaise
  • 1 teaspoon wholegrain mustard
  • 1 medium tomato (sliced)
  • 1 handful watercress
  • 1/2 loaf ciabatta (lightly toasted)

    Directions

    1. Heat 1 tbsp oil in a small frying pan; fry onion for 10 mins, stirring occasionally, until golden and soft. Add the sugar; cook, stirring, for a further 2 mins until the sugar has dissolved and is slightly syrupy. Remove the onions and juices from the pan; keep warm.
    2. Heat the remaining oil in the pan. Season the steak and cook over a high heat for 1-2 mins each side, or according to taste.
    3. Mix the mayonnaise and mustard. Layer the tomato, watercress and onions on the toasted ciabatta. Place the steak on top; spoon over the mustard mayonnaise. Serve immediately.
