- 1 sweet potato (sliced thin, lengthwise)
- 4 oz. cheese (bulgari)
- 2 Tbsp. pistachio (garlic, pest0, plus more for garnish, recipe found here)
- 1 roll (sun dried tomato, or other hard roll, cut in half)
- balsamic vinegar (I used Bistro Blends heirloom balsamic)
