- 1 kg onions
- 3 cloves garlic
- oil
- 1 glass white wine
- 1 tsp. cognac (optional)
- 1 Tbsp. flour
- 1 liter beef stock
- salt
- pepper
- 8 slices day old bread
- 100 grams cheese

Directions
- Slice the onions. Transfer them to a heavy bottomed pan. Add some oil and the sliced garlic and cook at a low heat for about 30-35 min until the onions have softened and become golden brown. It is very important to cook the onion on low heat, which brings out the sweetness in the onions.
- Add the white wine and the cognac. Cook until the liquid is reduced.
- Add the flour, mix well and cook for another 2 min.
