Description
This creamy onion dip is simple to put together and makes a great appetizer or snack. Cream cheese, sour cream, and mayonnaise create a perfectly balanced and creamy base. The onions are caramelizaed then mixed with vinegar and mustard, both of which add a bit of bold and vibrant flavor. Serve the dip with vegetable sticks, toasted rustic bread, or some crackers. This dip is great for any occasion, big or small.

- 2 yellow onions (medium-sized, diced)
- 1/2 Tbsp. butter (light)
- 1/2 tsp. paprika
- 1 pinch salt
- 1/2 tsp. Dijon mustard
- 1/2 tsp. balsamic vinegar
- 3 Tbsp. cream cheese (at room temperature)
- 1/4 cup light sour cream
- 1/4 cup light mayonnaise

Directions
- Saute the onion in the butter at medium-high heat together with the paprika and salt. Cook, stirring constantly, for 10 minutes.
- Reduce the heat to low and cook for 25 minutes more, stirring occasionally until the onions are dark and caramelized. Add the mustard and vinegar and cook for 2 minutes, stirring constantly. Remove from heat and let cool completely.
- Mix the cream cheese and mayonnaise together in a separate bowl. Add the onions.
- Cover with plastic wrap and refrigerate overnight. Serve at room temperature.
