- 1 sweet onion (or medium red, peeled & diced)
- 3 bell peppers (small, seeds & stem removed & diced, can be any colour, but 1 of each green, red, and yellow is nice)
- 2 garlic cloves (minced)
- 3 sprigs fresh rosemary (stems removed & minced very finely)
- 3/4 cup arborio rice
- 3/4 cup dry white wine
- 1 1/4 cups vegetable broth
- 2/3 cup tomatoes with juice (canned crushed)
- 1 Tbsp. tomato paste
- 3 Tbsp. fresh basil (chopped)
- 1/2 cup grated Parmesan (or pecorrino)
- 8 dashes sauce (tobasco, depending on how spicy you like it!)
- 1/2 lemon
