- 10 oz. rotel (can of, you can sub a 15oz can of diced tomatoes and a small 4oz-can of diced green chilies, even though it is a bit more oz it still works great)
- 1 cup quinoa (red or your choice)
- 1 cup vegetable broth (or chicken broth, low sodium)
- 1 cup corn
- 15 oz. black beans (drained and rinsed)
- 1 tsp. chili powder
- 1/2 tsp. cumin
- salt
- pepper
- fresh cilantro
- avocado
- cheese
- lime juice
- jalapeño (Fresh)
