Have made it with both chicken broth and veggie broth -good either way. I have even thrown in tomato paste and chopped anchovies with black olives. So far it's been good any way I've tried.. If I've been short on the amount of fresh tomatoes diced canned tomatoes work well to, just decrease the other liquid used.

I just made this and it turned out nicely! I used chicken broth instead of vegetable broth and it was delicious! I love how quick it was to make too.
