- 5 tsp. Cajun seasoning (divided, store-bought OR see my easy homemade seasoning below!)
- 1 cup rice (uncooked)
- 2 1/4 cups low sodium chicken broth
- 1 whole bell pepper (any color, OR ½ of two kinds - I used yellow and red)
- chopped cilantro (roughly)
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 1/2 tsp. paprika
- 1/2 tsp. pepper
- 1/2 tsp. onion salt
- 1/2 tsp. cayenne pepper
- 1/2 tsp. oregano
- 1/4 tsp. red pepper flakes

I made this about a week ago and felt like it came out really well. I personally didnt feel like the dish came out too salty and that the selection of herbs used in the creator's homemade seasoning mix were very well balanced. Or, maybe I'm just so attuned to spices these days, which I am. Going to be making this dish again soon with all the fixings, I was missing peppers and cilantro last time but it's surely going into the next pot.

Super easy to make! Very spicy so cut down on the spice as needed. Definitely cook rice for 25-30 minutes to absorb broth.

I made this just as directed but it was so salty, it was hard to eat. Another thing is the rice didn't soak up the liquid. Other than that, it was quite good. If I make this again, I won't use quite so much Cajun seasoning.
