- 2 Tbsp. olive oil
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 tsp. garlic powder
- 1/2 tsp. salt
- 1 poblano peppers (chopped bell pepper will work as well)
- 1/2 cup chopped onion
- 1 cup corn (frozen and thawed fresh or canned drained will work)
- 2 garlic cloves (chopped)
- 14.5 oz. black beans (drained)
- 14.5 oz. diced tomatoes (roasted, drained)
- 1 cup enchilada sauce (store bought)
- 1 cup chicken stock
- 1/2 tsp. salt

My family and I loved it! Added chopped tomatoes, avocado and sour cream and green pepper hot sauce as side toppings

I loved it. Could should have browned the chicken longer. Didn't have sour cream but I could see how that would have just put it over the top. My husband said it was something he wanted me to make again.

I like things spicy, so I probably should have added extra seasoning. The rice took much longer than expected to cook, and in the end I had to drain some of the liquid so the dish stopped resembling soup. I think that if I make the adjustments for timing, liquids, and spices next time, then I should very much like this dish. Oh, also. This makes sooo much. Leftovers for dayys.

Very good !, although I added a squeeze of lime juice and a bit of cilantro right before serving .

The rice needed a little more time to cook and I needed to drain the tomatoes (still watery after 20 minutes of cooking).

It was definitely really tasty and easy to make. Total cooking time exceeded the time listed. My only reservation is that when allowed to cook through the rice was over cooked...I used jasmine rice though. Definitely going to try again with long grain rice that doesn't cook as fast.
