This is the perfect find for the upcoming snowstorm! And so quick and easy to make. I added a diced green pepper to the initial sauté. Mushrooms, olives and/or other veggies would also work well. For a richer taste, I also replaced much of the water with more tomato sauce and, because I love it “good & gooey,” I used an extra portion of mozzarella cheese as well and served it up with a salad of fresh baby arugula, grape tomatoes, black olives and balsamic dressing with a few pinches of grated Asiago cheese for piquancy. Yummm!!!

Used chicken broth instead of water tomatoes with chilies

Instead of the water, I added more tomatoes and tomato sauce - turned out great.

Loved this quick and easy dish. I just added some bell peppers and onions to the mix. I paire it with a nice salad and homemade cheese bread. My family loves cheese so I did add a bit more on the top for them.

Simple, could add more vegetables like green peppers or zucchini. This recipe makes a lot of food.
