- 250 grams pasta (choice, we used gluten-free corn spaghetti)
- 600 grams vine ripened tomatoes (diced)
- 200 grams courgette (zucchini, cut into ribbons)
- 100 grams carrot (cut into julienne or matchsticks)
- 5 white mushrooms (sliced, or any other type of mushrooms)
- 1 tsp. minced ginger (check out our post on how to pre-mince ginger and preserve it)
- 2 cloves garlic (finely chopped or minced)
- 5 curry leaves (fresh or dried)
- 1 Tbsp. mild curry powder
- 1 tsp. turmeric
- 1 green chilli (small hot, optional)
- 1 onion (small, sliced)
- 1/2 tsp. sweet paprika
- 2 Tbsp. coconut oil
- 8 cups hot water (adjust as needed depending on the type of pasta)

- coriander leaves (cilantro for garnish, optional)
