- 500 grams boneless chicken thigh fillets (diced, or breast fillets if you prefer)
- 400 grams butternut squash (diced)
- 2 Tbsp. harissa paste (or to taste - I used Tesco Ingredients, which is quite mild)
- 600 mL chicken stock
- 300 grams brown rice (easy cook, see note 2)
- 2 Tbsp. chopped parsley (plus extra for garnish)

This dish turned out really well. I will definitely be making it again! I like how the spice of harrisa and the sweetness of the squash set each other off.

It was beautiful tender vegatables and chicken full of flavour and delicious we got harissa from Asda but it was not their brand. Only thing is the brown rice took a really long time so patience is key very rewarding meal to make very easy will make again.

Made this both as directed and a second pot vegetarian using chickpeas with some added sugar snaps and baby corn. Delicious.
