- 1 yellow pepper (sliced)
- 1 cup frozen corn
- 1 red onion (sliced)
- 1 packet taco seasoning
- 20 oz. green chilies (RO*TEL with, do not strain)
- 4 1/2 cups water
- 1 Tbsp. olive oil
- 1/2 tsp. red pepper flakes
- 1 can black beans (drained and rinsed, 14 ounces)
- 1 lime
- 1 cup colby jack cheese (shredded)
- 3 green onions (chopped)

This was simple and good! It took way longer to cook all the way for me though, and I had to take off the lid to get all the water to evaporate. It also needed additional seasoning like cumin, salt, and pepper.
