I didn’t end up having enough quinoa, ended up adding in some rice, still worked out great. Also added some cumin and chili powder for some more flavor.

Delicious! Added ground pork seasoned with southwest seasonings and topped with avocado. I had to make myself stop eating - so good!

I followed the recipe with the only modification being adding fresh diced tomatoes from my garden. I topped it with pain greek yogurt & avocado. It was delicious & very filling. This is a great meal for my vegetarian daughter and filling enough for my meat eating husband!

I added an onion and used chicken broth. And because we love our food really spicy I added more jalapenos. Then I threw in some shrimp at the end. We loved it!!!!

This was fabulous! I was out of quinoa so I used couscous and added cut up pan seared chicken breast! Will be making this again and again!
