  • 1 jalapeno (minced)
  • 1 cup quinoa
  • 1 cup vegetable broth
  • 15 ounces black beans (drained and rinsed)
  • 14.5 ounces diced tomatoes (fire-roasted)
  • 1 cup corn kernels (frozen, canned or roasted)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • kosher salt
  • freshly ground black pepper
  • 1 avocado (halved, seeded, peeled and diced)
  • 1 lime
  • 2 tablespoons cilantro leaves (chopped fresh)

    Not good. I followed the directions but didn’t like it at all. It was bland and the texture was like a paste. We ended up throwing it away. Couldn’t even finish it.

    I love this recipe! It's a go-to everyone likes it recipe. We like to eat it in lettuce wraps and it's even better.

    So tasty and easy, doubled the black beans and added some more seasoning. Would have been great with some seitan or TVP added in as well.

    I personally prefer adding some extra cumin. Soooo yummy, got some heat from pepper and jalapeño, some freshness from tomatoes. Too good!!!

    This is a great dish. I doubled the spices though because I enjoy intensely flavoured food. I also added fresh chillies for extra heat. Once at the table I added a squeeze of lime juice and cilantro to the dish because I'm not that fussed with guacamole. The avocado simply added to the dish adds a creaminess that I love.

    Made it without the black beans inside with everything. But used refried black beans and wheat tortillas! It was so easy and quick. It Tastes Amazing!
