Description
A sweet and tangy glaze coats tender, juicy pork loin, and it roasts all on one sheet pan with crisp green beans and apples. You'll have the easy prep completed by the time the oven is hot. The recipe is a Yummly original created by Sara Mellas.

- 1 Tbsp. extra-virgin olive oil
- 1/2 tsp. salt (for beans)
- black pepper (to taste, for beans)
- 2 red baking apples (medium, like Fuji)
- 1 center-cut pork loin (1 1/4-1 1/2 pounds, with fat trimmed or with 1/4 inch fat left on, for a crispy coating)
- 1 tsp. salt (for pork)
- black pepper (to taste, for pork)
- 2 Tbsp. Dijon mustard
- 2 Tbsp. maple syrup
- 1/2 tsp. dried thyme leaves

Directions
- Preheat the oven to 400°F.
- Line an extra-large baking sheet with parchment paper.

Really easy, pork was moist and tender. Apples and beans were a little strange.

It was really yummy and easy. I used a bigger pork loin and it had to cook for another 35 minutes, but it all tasted great

My first Yummly recipe and wow it was really good! My husband enjoyed it as well and he’s a bit picky! I did not think the meat would be tender but I was definitely wrong. It was really tasty and tender

Delicious and easy to make. We used a mesquite BBQ flavored pork loin and used truffle salt and garlic powder on the beans.

It's delicious! I think it would be even better if you cooked it low and slow like at 225 on a smoker if possible. I would also make more sauce to pour over the cut meat at serving.

Delicious! Quick, easy, autumn festive dish. My apples did come out like unformed mush unlike the advertised photo of the finished dish, I may have sliced them too thin; but tasted phenomenal all the same.

I'll definitely make this again! It is so simple and tasty - the pork seemed to absorb the maple/dijon taste all the way through, and the fruits and veggies became soft and flavourful. Low calories too!

It was a great dinner. I used cauliflower and broccoli as veggie because I didn’t have green beans! It was tasty and the pork was very moist! I will make it again. I think I will try butternut squash as the veggie. That will be nice as autumn arrives!
