- 4 chicken breasts (or about 6 chicken thighs pounded to be of equal thickness)
- 1 cup sliced potatoes (thinly, I used sierra red. Make sure you cut them thinly or they will not cook quickly enough)
- 3 cloves garlic (minced)
- 1/2 tsp. fresh rosemary (chopped)
- 1/2 tsp. fresh oregano (chopped)
- 1/2 tsp. fresh thyme (chopped)
- 1/2 tsp. smoked paprika
- 1 cup whole milk (sub in heavy cream if you want something more indulgent)
- salt
- pepper

This recipe was surprisingly great. the chicken was flawless. My potatoes came out a bit soggy (not sure if they are supposed to be) maybe I sliced them too thin. the sauce was difficult to keep liquid. I recommend pulling the pan off of the stove as soon as you put your chicken in. I just made additional sauce afterword. Even with what went wrong this meal was delicious. My wife loved it and I will be trying it again soon.

Changed my rating after revisiting this one a few years later- it's great! For serving, keep in mind that the potatoes are more of an accent for the chicken, and not a "side" of their own. Would recommend serving with a big side of veggies (I did roasted brussels sprouts)
