Delicious, moist, healthy muffins that are great for breakfast or a snack. I tweaked the recipe quite a bit. They turned out great!

Surprisingly moist…lots of flavor. The batter did not seem moist enough to me, but they turned out great. I only had sweetened coconut, so I used that, but next time I’ll use unsweetened because they are plenty sweet enough with the applesauce, sugar and apple. Will definitely make again.

A staple in my breakfast rotations! Easy to customize with whatever you have on hand, and my kid loves them too! The only problem with them is that it takes longer to make them than to eat them :P

Made this during the virus shelter in place period (April 2020) so I didn’t have all the ingredients on hand and could not go shopping. I had to make do: no wheat flour, used white flour. No apple to grate, used extra coconut flakes. No walnuts, used pecans. No coconut oil, used canola oil. The batter was a bit thick so I added a small egg. The end result was great. I had been craving the Whole Foods morning glory muffin; my patchwork version was a really close match.
Update Dec 2020: I’ve made this recipe many times since my initial review. Tonight I wanted a quick snack cake so I adapted this recipe by increasing the brown sugar to one cup; adding a half teaspoon of nutmeg and about a quarter teaspoon of orange zest. And I replaced the applesauce with an egg. Baked at 325 in a springform pan. It was great - moist and just sweet enough that I didn’t bother with frosting

Super good. I added a tablespoon of apple cider vinegar for added fluffiness. And swapped raisins out for goji berries.

Amazing! Moist and filling. We added chopped apricot pieces. I am making it again, right now! So delicious!
