Description
Tortas de aceita, otherwise known as Spanish olive oil tortas are a light, crisp, sweet, flaky biscuit made with olive oil and shaped like a torta. This recipe for Olive Oil and Anise Cakes also uses olive oil to make these sweet biscuits but adds the unique flavor of star anise to create something unique and different. Sesame seeds add a crunchy texture element to this sweet thin biscuits. If you find the slight olive oil taste too much for you, you can substitute butter.

- 660 grams pastry flour
- 27 grams sugar syrup (invert, or 45 gr. sugar)
- 230 grams water
- 280 grams virgin olive oil
- 0.3 grams anise extract
- 13 grams fresh yeast
- 10 grams star anise
- 7 grams sesame seeds
- 3 grams salt
- 10 grams sugar

Directions
- Place the flour in a bowl. Add the liquid ingredients and beat.
- Add the solid ingredients and mix for 2 minutes.
- Cover the dough with plastic wrap and let it rest to double its volume.
- Preheat the oven to 190 degrees Celsius.
- Place the dough on a flat surface and flatten using a rolling pin. Divide into portions and stretch to 3-millimeter thick 15-centimeter diameter circles.
