Beautifully creamy and not too sweet. It applied easily to the cake. Different strengths of chocolate will dramatically influence the flavor. I used milk chocolate in my first attempt as it topped a rich and already chocolatey devil's food cake. Perhaps with a yellow cake, I might try a 60% cacao chocolate to highlight the intense chocolate flavor.
