- 4 bone-in pork chops (each 3/4 to 1 inch thick, patted dry)
- fine sea salt (or kosher)
- freshly ground black pepper (to taste)
- 2 onions (medium, trimmed, peeled, halved lengthwise, and sliced thinly lengthwise, see note above)
- 2 green apples (1 or, tart, peeled, cored, and sliced thinly)
- 2 Tbsp. dry white wine (dry vermouth, or water)
- 2 tsp. fresh thyme leaves (minced)
- 1 Tbsp. butter
- 2 Tbsp. olive oil
- 3 Tbsp. unbleached all purpose flour (or gluten-free flour, rice, sorghum, millet or a flour blend will all work)
- 1 cup apple cider
- 1/4 cup dry white wine (dry vermouth or chicken stock)
