- 2 cups canned pumpkin puree
- 12 oz. evaporated milk
- 1/2 cup dark brown sugar (packed)
- 1/3 cup white sugar
- 1/2 tsp. salt
- 2 eggs (plus the yolk of a third egg)
- 2 tsp. cinnamon
- 1 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. cardamon (ground, I left this out)
- 1/2 tsp. lemon zest
- 1/2 batch pie dough (The One, to Rule Them All*)
- 1 cup heavy cream (chilled)
- 1 Tbsp. confectioner's sugar
- 1 1/2 Tbsp. bourbon (we like Bulleit)
