- 1/2 heavy cream (or and-half, enough to add to the coconut milk to make 3 cups)
- 3 egg yolks
- 3/4 cup white sugar
- 1/3 cup cornstarch
- 1/4 tsp. salt
- 1 cup flaked coconut (toasted*)
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- 1 graham cracker crust (recipe, below or traditional pie crust)
- whipped cream (Fresh, lightly sweetened)
- 12 whole graham crackers (rectangular)
- 1 stick butter (melted and slightly cooled)
- 3 Tbsp. sugar

Second time making it, and it’s a great recipe. Just takes some patience and arm endurance because the stirring takes AWHILE

I had another recipe that left me with 1/4 evaporated milk. I added that to the coconut milk. That brought me up to 2 C. I then added 1 C heavy cream.
It was delightful.

Easy and yummy I did not have any cream so I substituted sour cream an extra 1/2 c sugar and milk mixed

Made this pie because of the reviews that I read and the ingredients
that were in it. The result was the best coconut cream pie that I have eaten. Very simple to make.

Great! I made it with a traditional pie crust and toasted coconut in the filling. Topped it with fresh whipped cream and toasted coconut. Both my husband and son said it was the best coconut cream pie they ever ate!

This is the best coconut cream pie recipe I've made. Coconut cream pie is my favorite dessert so I make a lot. And I love how it sets so well!
