- 1/2 tsp. sea salt
- 1/2 tsp. baking powder (aluminum free)
- 1 tsp. ground cinnamon
- 2 Tbsp. chia seeds
- 2 eggs
- 1/2 cup coconut milk (not light)
- 1/2 cup virgin coconut oil (liquid, plus more for oiling muffin tins)
- 1/2 cup pure maple syrup (divided)
- 1/2 tsp. pure vanilla extract
- 2/3 cup raisins (or other dried fruits, nuts, chocolate chips, etc.)

These are wonderful & such a nice little breakfast to grab on the go. So nutritious & satisfying at the same time. These will be a regular in our health conscious household. We have gluten & dairy allergies, so these are perfect! One minute under the broiler as the last step was just enough without burning & added a really nice crunch with the insides still being moist. I used raisins, dairy free chocolate chips and walnuts to the mixture.
