pump from my homemade almond milk and didn't want to throw out the pulp, seems like such a waste. I was a Saturday morning, thought it would be a good time to turn the pulp to some brunch and thus this recipe was born. I absolutely love these waffles, high in fibre and protein, so healthy and tasty.
You will not regret adding these to your brunch menu!
- Waffles: Mix the dry and wet ingredients in separate bowl, then combime the almond pulp with the dry and mix well, then pour in the wet mixture. Let sit for 5 to 10 mins for the mixture to thicken and while your waffle iron is warming up.
- Wildflower honey and blueberry syrup: Heat a small pan add blueberries and water, let it heat it for a few minutes, reduce heat to medium, add honey salt and lemon juice of half a lemon. Let it some to s simmer and reduce heat to low. Let it reduce to your desire of thickness. I let it cook down for about 10 to 15 mins of medium to low heat, adjusting it every so often and stirring so it won't bowl over or burn on the bottom.
