Didn’t have any dates so used figs instead. Worked pretty good! Lots of seeds. Really tasty and moist, but still holds together.

Tried it once with peanut butter and another time with almond butter. I prefer the almond butter.

I was looking for a gluten-free vegan cookie that is nice and crunchy. This one was perfect!
