- 1/4 cup coconut oil (melted)
- 1/2 cup date syrup (homemade, recipe follows)
- 2 large eggs
- 1 banana (mashed)
- 1 cup carrots (grated)
- 1 tsp. vanilla extract (or seeds from 1 vanilla bean)
- 1/4 cup buttermilk (I used coconut milk to keep vegan and used this substitution for buttermilk)
- 1/2 cup date syrup (recipe follows)
- 2 Tbsp. cocoa powder
- 1/2 Tbsp. coconut oil (melted)
- 8 oz. dates (mardjorn, pitted)
- 1 cup water (filtered)
