- 1 lb. chicken breasts (legs boneless and skinless or with bones, as you prefer)
- 1 oz. raw cashews (or sub with almonds if you prefer)
- 1 onion (small, chopped)
- 1/2 cup tomatoes (diced)
- 1/2 serrano (green, Jalapeño, or Thai chile pepper)
- 5 cloves garlic
- 4 slices ginger
- 1 tsp. turmeric
- 1 tsp. salt
- 1 tsp. Garam Masala
- 1 tsp. coriander powder (Cumin)
- 1/2 tsp. cayenne pepper (adjust to your preference)
- 1/2 cup water (I used this to slosh about int he blender jar and then poured it into the pressure cooker)
- 1 tsp. Garam Masala
- 1/2 cup full fat coconut milk (or more)
- 1/4 cup chopped cilantro
