- 5 sprigs fresh thyme (or ½ teaspoon dried)
- 1 carrot (peeled and finely diced, about ½ cup)

- 1 rib celery (finely diced, about ¼ cup)
- 1/2 cup fresh flat leaf parsley (finely chopped)
- 1 cup walnuts (or pecans, coarsely chopped)
- 4 oz. sharp white cheddar (Cabot Cheese, sliced and cut into small cubes, about 1 cup*)
