- noodles (12 – 14 ounces fresh Jjajangmyeon, or udon)
- 1 pork loin chop (boneless, about 1 ½ inches thick, cut into ½ inch pieces)
- 1 Tbsp. mirin
- salt
- pepper
- vegetable oil (for the pan)
- 1 medium onion (diced)
- 1 small carrot (peeled and diced)
- 1/2 zucchini (diced)
- 1 cup green cabbage (chopped)
- 5 Tbsp. sauce (Jjajang, Korean black bean paste. Make sure it says "roasted.")
- 1 Tbsp. sugar
- 1 Tbsp. oyster sauce
- 1 cup reduced sodium chicken broth
- 1/2 Tbsp. cornstarch (dissolved in 2 tablespoons water)
- 1/2 cucumber (cut into matchsticks for garnish, optional)
