- 200 grams tofu (silky, cut into 2 cm cubes)
- 1 stalk lemongrass (trimmed, outer layers discarded, halved lengthwise, and smashed with the side of a knife)
- 1 piece fresh ginger (around 2 cm long and 1/2 cm wide, thinly sliced)
- 3 cups vegetable stock
- 3 shiitake mushrooms (stemmed and sliced)
- 1 bunch rice noodles (around 150 g)
- 1 handful leaves (pak choy, leave as whole or cut into small pieces)
- 1/2 cup beansprouts
- 1 white pepper (sprinkle of)
- coriander leaves (Some, to garnish, optional)
- salt (to taste)
