This ice cream had a great fresh taste with the roasted strawberries. Having said that I would cook the strawberries on the stove as it is less messy and the results would likely be the same. Double or triple the amount of strawberries, you won’t regret it.:)
The consistency was hard and did not have a creamy texture because the coconut oil solidified once in the freezer and never fully melted even after being tempered for 40 minutes! Next time I make it I will substitute the coconut oil for coconut rum as the alcohol will keep the consistency soft and creamy.
Overall this was a great recipe!
