Fantastic! I used 3/4 stoneground organic wholemeal and 1/4 Italian 00 flour and it turned out perfect, light and fluffy all the same and of of course healthier for you (which makes you feel great about eating more of it :o)

Fantastic! It came out really dense one time so i made sure to knead it less next time.

I let this rise for 10 hours, and it was more sticky than I expected; more like a thick batter. I added flour enough that I could pick it up long enough to put it in the dutch oven. It baked very well (30 covered, then 10). It made a more dense bread than I usually get; I liked it very much. I'm going to play with it to see if I can get a doughier consistency.

Perfect. I was somewhat hesitant. I used bread flour and added enough after the rise so it wasn't sticky but the dough was still a saggy ball. After 30 min it came out picture perfect.
