Description
Tender, fluffy stovetop white rice is as simple as employing the pilaf method. Just saute dry rice in a bit of butter or oil to seal the individual grains so they remain separate and fluffy when cooked. This method also adds a subtle toasty, buttery flavor. The basic recipe is infinitely adaptable. You can add additional flavor by first sauteing chopped onion, celery, and/or bell pepper in the butter before adding the rice. You can add chicken stock or vegetable stock instead of water. Or add a few whole spices like bay leaves, cloves, or cardamom pods to the rice to make your own spin on this easy side dish. The recipe, which makes 4 1/2 cups, is a Yummly original created by Ivy Manning.

- Put butter in a medium saucepan (3- to 4-qt., preferably with a heavy bottom) and melt over medium heat. Add the dry rice and cook, stirring frequently, until rice is coated with butter and about half of it becomes opaque white, about 4 minutes.
- Add water and salt (be careful; water will bubble up when it hits the hot pan). Increase heat to high and bring to a boil. Cover, reduce heat to low, and cook without stirring until rice is tender and all the liquid has been absorbed, 18-20 minutes.
- Remove pan from heat. Fluff rice gently with a fork. Cover pan with a clean dish towel or double layer of paper towels and then the lid and set aside for about 5 minutes. The towel will absorb any excess steam that can make the rice mushy.
- Serve rice immediately. Cool any leftovers, then chill airtight up to 5 days, or freeze up to 3 months. Reheat in the microwave until piping hot.
