Been keto-ing for a month now and this is one of our favorite Keto dessert recipes we have found so far. I make ours in mason jars with strawberries. I read in the comments of the recipe that you could sub heavy whipping cream for the sour cream, so that's what I did. Also, i highly recommend cutting the butter in the crust recipe to 1 tbsp.... 1.5 tbsp was way too much and made my crust soupy the first time. I ended up adding extra pecans/almonds to fix it. Since i like making this for me and my husband, i found it easier to make a double batch and construct the 2 desserts after everything was prepared. I like to layer this dessert in my mason jars. I set a thin crust layer per the recipe on bottom then layer cheesecake, fresh mashed strawberries, a little more crust and whip cream... also added some chopped strawberries on top. Has turned out great every time I've made it. Any way you decide to construct it, this is a very satisfying serving for one... we were stuffed. Try it!!
