- chocolate cookie (LAYER:)
- 1 cup walnuts
- 1/2 cup oats (I use Country Choice Organic Oats)
- 5 Tbsp. cocoa powder
- 1 cup dates (soft, about 10-12 Medjool dates)
- 1/4 tsp. sea salt
- 1 tsp. vanilla
- water (as needed to bring everything together, about 1-2 tablespoons)
- cream (LAYER:)
- 4 Tbsp. coconut oil (melted)
- 2 Tbsp. milk (your choice, I use my homemade coconut milk)
- 1 Tbsp. maple syrup
- 6 drops liquid stevia
- 1/2 tsp. vanilla
- 1/3 cup oat flour (I make my own by grinding quick oats in a coffee grinder)
- 1 dash sea salt
- 2 Tbsp. cacao nibs (optional)
