I have made these twice now, both times with a bit of variation, and both ways turned out sooooo good! Though I must say the title of “cinnamon vanilla” doesn’t really fit. You taste much more of the prune sweetness than the spices.
I blend the nuts and spices first and then add the fruits/wet ingredients so that the nuts blend finer. The texture has worked well both times with this method.
With the first batch, I didn’t want any extra flavoring besides the fruit and nut, so I omitted the cinnamon and vanilla ( and the oil: I’m not even sure why the oil is needed. Mine were totally formable without oil. ) They were amazing!, but almost too sweet so...
With the second batch I only used 1/4 cup each of the dates and prunes. I also added the cinnamon and vanilla (I used only 1 tsp) that were called for in the original recipe. Guess what? Still amazing and just the right amount of sweetness for my family.
I feel like you could do so many variation of this recipe swapping out different nuts and fruits and they will still be amazing. My next variation will use walnuts, dates, and raisins in hopes of them tasting like an oatmeal raisin cookie.
I definitely recommend this recipe.
