- 1 dash coconut vinegar (or apple cider ,optional)
- 1 Tbsp. Earth Balance
- 12 oz. oyster mushrooms (10- ,or white, brown, destemmed and chopped)
- 1 cup soy curls (Butler)
- 1/2 sheet nori (crumbled)
- 1 Tbsp. olive oil
- 2 Tbsp. Earth Balance (1- ,or refined coconut oil)
- 4 strips tempeh (or vegan bacon, I used Sweet Earth’s Benevolent Bacon, chopped)
- 1 dash liquid smoke
- 1 celery stalk (chopped)
- 1 medium onion (diced)
- 3 garlic cloves (smashed and chopped)
- 1 tsp. fresh thyme (chopped)
- 1 bay leaf
- 5 cups chicken (mushroom or vegetable stock)
- 2 cups Yukon Gold potatoes (peeled and diced)
- 1 Tbsp. cornstarch (blended with 2 TB water)
- salt
- pepper (to taste)
