- 1 yellow onion (finely diced)
- 1 1/2 lb. haddock (about 2 fish or 4 fillets, cut into 1″ chunks)
- 2 cups water
- 1 1/2 cups milk
- 12 oz. evaporated milk
- 2 tsp. salt
- 1 tsp. pepper
- 2 Tbsp. butter
- 3 Tbsp. parsley (finely diced, optional but quite effective)

I like the ingredients and the proportions but apparently I never read the instructions through to the end. I cooked it each time until it flaked from 10-15 minutes, but if I’d simmered for an hour I would have had mush.. I followed recipe except didn’t cook part of fish to make a broth: it does that automatically when I put all the fish on top of the potatoes.
Second time:
I used extra butter as I didn’t have salt pork or bacon.
I added 1/2 cup carrots, 2 stalks of celery, 1/4 pepper all chopped small, to the onions.
Next time:
I doubled the potatoes.
I used half and half instead of milk and evaporated because I had it on hand.
4th time used all whole milk because that’s what I had.3/10/20
5th: 1 c heavy cream and 2 c milk. (It’s what I had) 3/07/24
