- 2 leeks (washed and sliced)
- 1 onion (sliced)
- 2 Tbsp. olive oil
- 4 garlic cloves
- 3 bay leaves
- 2 carrots (chopped)
- 6 potatoes (cubed)
- 1/2 tsp. fennel seeds
- 2 tsp. orange zest
- 4 sprigs parsley
- 3 cups fish stock (i've used clam broth)
- 3 tomatoes (large ripe)
- 1 lemon
- 3 lb. fish (assorted, and shellfish, haddock, lobster, scallops, shrimp, mussels, whatever you have on hand)
- 1 cup fresh parsley (chopped)
- 4 saffron (thread, i've done without--expensive!)
- salt (to taste)
