- 3 oz. milk chocolate (chilled until mostly frozen)
- 1 cup all purpose gluten free flour (I used Better Batter)
- 1/2 tsp. xanthan gum (omit if your blend already contains it)
- 1 cup gluten free oat flour (certified, I grind 120 grams of certified gluten free rolled oats into a fine powder in a blender or food processor)
- 1/4 tsp. kosher salt
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 6 oz. semi sweet chocolate chips
- 4 oz. nuts (chopped raw, I used peanuts, but almonds, pecans or walnuts all work well)
- 8 Tbsp. unsalted butter (at room temperature)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 1 egg (60 g, out of shell at room temperature, beaten)
- 1 tsp. pure vanilla extract
- 1 Tbsp. milk (any kind, at room temperature, plus more if necessary by the teaspoon)
